Eel Fish Kinshidon !

Why not try eel fish in Kyoto?
 
Recently I went to an eel rich restaurant, by sitting on the counter you can watch the whole process of how the cuisine is done.
 
First, the chef fired the eggs to flat pieces, and cut them into very skinny pieces just like yarn. At the same time another chef grilled eels with charcoals. After the eggs was done, the chef mixed freshly steamed rice with eel sauce and sesame. Then put eels on the rice in bowl, and put the egg yarn on the top. It took more than 40 minutes before the dishes was done, but I felt like just watched an artful performance!
 
The restaurant is so popular that I tried three times and finally made the reservation successfully. If you want to try too, better make a reservation first.
